Menu Planning

So in an attempt to hold us accountable for eating dinner at home, I told Todd I was going to do a menu Monday post and start writing up what we planned to cook/eat for dinner that coming week.

Naturally I forgot to post it yesterday. But I did manage to write it all down on my iPhone notepad.

Here is a look at what's cookin' this week in the K household:

Monday: Me - healthy choice fresh steamer meal & salad; T - working late, eating at work

Tuesday: Shrimp Caesar Salads

Wednesday: Crockpot sweet & sour kielbasa over rice (Kielbasa cut into 1 inch pieces, diced mixed red, yellow and orange peppers, diced red onion, minced garlic, one bottle Lawry's Hawaiian style marinade -- all tossed in the crock, set on low for about 7-8 hours...let's hope this works!)

Thursday: $5 foot longs - Subway (I'll either get a salad or save 1/2 of my foot long for Friday's lunch)

Friday: Me - out to dinner; T - working late, eating at work

Saturday & Sunday are always unpredictable, so I won't be including them. And naturally because we love subway, and this month all foot longs are $5, we had to squeeze them in one night. Plus Todd has early softball games on Thursday so a quick dinner means we get to eat together before he heads out.

I'm a dummy though and completely forgot my scheme for this weeks menu and got all excited about the crockpot kielbasa and threw it all in the crockpot this morning. It wasn't until I went to grab some celery out of the crisper to take with me for lunch today that I noticed the Caesar salad kit staring back at me shouting "we're about to wilt! eat us". So tonight's shrimp Caesar salad meal will be pushed back to tomorrow with a great chance of getting scrapped all together for something else involving shrimp seeing as the romaine lettuce will probably be brown come tomorrow evening.

I'm aware of the fact we're only cooking at home twice this week, but with Todd working late twice, and the spell that subway apparently has on us, it just wasn't a good week for cooking. Maybe next week will be better...

I have been trying to meal plan for the week as well. I keep a journal of my meal plans for the week so that in a few weeks when I am running out of ideas, I can just refer back to one of the other weeks that have already been successful. I've been trying to come up with meals that link together so that a lot of the prep and cooking is already done for the second meal. For instance, I made double of this crock pot chicken and rice yesterday. Today, I added sauted onions, peppers and garlic (that I bought already chopped and frozen), 2 cans of black beans, one can of corn, the rest of the chicken, rice and broth from yesterdays meal and turned it into soup with a can of chicken broth. No real cooking to do tonight and it was awesome! Plus I have left overs for tomorrow :-)

Good advice! You should get back to blogging and post your weekly meals/menu :)
